And heres a recipe for a BBQ sauce I made recently. I think it's my favorite that I've made so far. I want to continue to tweak it, but here's the basics of it so far:
1 T Butter
1 C Red/Sweet Onion Mix
1 Large Garlic Clove
1 Large Clove of Black Garlic (I found this at Whole Foods)
1/2 C Worchestershire
1/4 C Tomato Paste
1/4 C Ketchup
1/4 C Apple Cider Vin
2 T Balsamic
1/2 C Brown Sugar
1/2 C Veal Stock
1 T Chili Powder (Get creative here: here, Korean Chili, Espelette, Aleppo, Togarashi, etc)
1 t Cumin
1 t Coriander
Zest from 1 Lemon
Sweat onions and garlic in brown butter. Toast cumin and coriander, add when onions and garlic are done (onions will be translucent). Add remaining ingredients, bring almost to a boil then simmer gently for one hour or more. Taste, tweak, taste, etc.
